When I connect my iPad to to an external mixer (via USB) I have an external mode radio button in the settings panel.
When I turn that on the +/- buttons on the waveform to pitch bend disappear.
How can I pitch bend on screen when using external mode radio is on.

It looks like your screenshots aren’t in your link anymore, but I think I can respond without seeing them.
When Hardware Mode is enabled, the +/- buttons disappear because they are a component that could be controlled with an external device, so to save space, they are removed from the UI.
If you’d like to pitch bend with the screen, you must ensure that Hardware Mode is disabled.
