Hey folks!
I have a rather complex and custom MIDI mapping created on version 5.1.7917.0.
Now, after an update, I’m trying to import the mapping and it isn’t working.
I realised the format changed, from something that used to look like JSON, to now XML 1.0.
What can be done besides having to manually remap hundreds of buttons?

I can confirm that nothing has changed internally with regard to MIDI mapping file formats.
Usually mapping files should be in an XML format, but djay is able to read mapping files in different formats described here.
In the macOS, iOS, NeXTSTEP, and GNUstep programming frameworks, property list files are files that store serialized objects. Property list files use the filename extension .plist, and thus are often referred to as p-list files.
Property list files are often used to store a user's settings. They are also used to store information about bundles and applications, a task served by the resource fork in the old Mac OS.
