Still having issues after update with iTunes is there a fix as I’m performing tonight?

If the error is coming from iTunes servers, then the problem needs to be fixed by Apple.
"The 500 Internal Server Error is a generic error code that means the server had an unexpected problem and could not fulfill the request. "
There’s not much you can do.
Like fully reboot your device
or use apple time machine to revert iTunes to previous version.
If you have VPN turned on, check the connection without VPN.
