Everything is basically in the heading, - Can’t add custom sample packs and can’t download new sample packs

Seem’s to be some kind of permissions issue

Please follow this guide on how to add samples. Do you still have issues?

Do you get an error message every time you try to play a sample? Could you please try re-installing djay PRO AI on your Mac?
